Happy Easter

You would be forgiven for mistakenly thinking we are still in the deepest depths of winter, what with minus temperatures  outside, 4 to 5 inches of snow on the ground, you would not think April starts next week and Easter Sunday is a week today…

It feels like I should be planning for Christmas Lunch not Easter Lunch next week.  With that in mind, there is nothing more I prefer on Easter Sunday than Roast Lamb, my favourite!

With the end of lent this week, there is nothing better than celebrating Easter with friends and family.  With the lamb already sorted, I also want to make a celebration cake.  But what to make? something different..

While staying at a B & B in Kidderminster, Worcestershire, A fantastic little B & B called Country Barn, our host Cathy gave me her Simnel cake recipe.   As I am not a lover of dried fruit which traditional Simnel cake is made up of, this one is a delicious rich chocolate, orange and almond cake, what better way to mark the end of lent.  You can also check out Country Barn B & B  on their Facebook page.
